- 1/4 cup raw cashews, refrigerated and soaked for 4 hours or overnight
- 1 cup coconut water
- 1 banana
- 1 cup pineapple chunks, frozen if desired
- 1 cup ice cubes
- 1 tablespoon coconut meat butter, such as Nutiva Coconut Manna (found here).
Instructions
- Drain and rinse the cashews.
- Next blend cashews and coconut water in a blender until completely smooth, about 1 minute.
- Add banana, pineapple, ice, coconut meat butter and blend until smooth, about 45 seconds.
