Description

A glow-worthy Vegan Pina Colada Breakfast Smoothie that is loaded with nutrients like vitamin C and fiber. Yummy breakfasts on the go.  Vegan, Dairy Free.


Ingredients

Scale
  • 1/4 cup raw cashews, refrigerated and soaked for 4 hours or overnight
  • 1 cup coconut water
  • 1 banana
  • 1 cup pineapple chunks, frozen if desired
  • 1 cup ice cubes
  • 1 tablespoon coconut meat butter, such as Nutiva Coconut Manna (found here).

Instructions

  1. Drain and rinse the cashews.
  2. Next blend cashews and coconut water in a blender until completely smooth, about 1 minute.
  3. Add banana, pineapple, ice, coconut meat butter and blend until smooth, about 45 seconds.
