This recipe is so much fun to make for those of us who are let’s just say… “baking challenged”!  I hope I’m not the only one. There is really no way to screw up this chocolate almond bark recipe, promise.

So dive into the mess of it, because melted chocolate is messy but there is a whole lotta deliciousness in this mess. Every imperfect piece is just as tasty as the perfect pieces.

Nutrition Tip: I always like to pair chocolate with raw almonds or walnuts because the healthy fat from the nuts helps slow down the absorption of the simple sugar from the chocolate. Bonus, you eat less because again the healthy fat curbs your appetite faster than if you were to just eat a plain milk chocolate bar.

The combo of almonds, coconut flakes and cranberry makes this so perfect. There is nothing and I mean nothing better than chocolate!!! Agree?

How To Make Chocolate Almond Bark

Description

This chocolate almond bark recipe makes a perfectly clean and healthy dessert. It is also a thoughtful edible gift you can give year round.


Ingredients

Scale
  • 8 ounces dark organic chocolate ( this is my favorite one )
  • 5 tbsp raw cacao powder ( I used this one
  • 3 tbsp maple syrup ( or raw honey) 
  • 1/2  cup dried unsweetened coconut flakes 
  • 1/2  cup slivered almonds 
  • 1/2  cup dried cranberries (can also use goji berries)
  • 1/4 tsp of sea salt. 

Instructions

  1. Start by lining a baking sheet with wax paper or parchment paper and toast the almonds in a preheated oven at 350F for 5 mins. 
  2. While almonds cool, bring a quarter-full saucepan of water to boil.
  3. Turn the heat down to simmering. Place a heatproof glass bowl over the simmering water. The bowl should be larger than the pot. Make sure no water gets in the bowl. 
  4. Gently stir the chocolate until it melts.  Important, make sure not to burn the chocolate and that the temperature doesn’t go over 48°C / 118°F.
  5. Once the chocolate is fully melted add the sea salt and maple syrup.
  6. Now add the toppings into the mixture and stir until everything is combined well. 
  7. Pour the entire mix onto a baking sheet that is lined with parchment paper, spread with a spatula to even out.
  8. Sprinkle some of the topics over the chocolate, drizzle some more chocolate over the entire thing and put in the fridge to set for about 1 hour. 
  9. When fully frozen, use your hands to break the chocolate into smaller pieces. Voila! You now have chocolate bark. 
  10. Store in a cool, dry place in airtight container. 
  11. Wrap with brown paper or gift in a pretty cookie box.

Notes

To make this as an edible gift, simply wrap the chocolate bark in a decorative dessert bag, or in a pretty cookie box like these ones. So cute!
