Description

These Apple Pie Energy Bites are the ultimate snack-on-the-go, great for an afternoon pick-me-up or when you just need something sweet asap!

Ingredients

Scale
  • 12  Medjool dates pits removed
  • 1 cup dehydrated apples or apple chips (Trader Joe’s)
  • 1/2 cup raw walnuts
  • 1/2 cup old fashioned oats
  • 1 tsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 2 tbsp water, more if needed
  • 1 tbsp chia seeds

Instructions

  1. Buy pitted dates or remove the pits from dates and soak them in hot water for 10 minutes. When the dates are softened, drain them and place in your food processor. Save the water.
  2. Next, add all of the dry ingredients – apple chips, oats, walnuts, chia seeds, spices to the food processor and blend until mixture turns into a dough-like consistency.
  3. Now add 2-3 tablespoons of the water you saved from the dates if the mixture is still too dry.
  4. With a spoon or ice cream scooper, scoop the mixture out and hand roll into small balls.
  5. Place the balls on a tray or baking sheet.
  6. Refrigerate the balls for 3-4 hours and enjoy! For larger batches, you can store in ziplock or freezer safe, airtight container.
