We are vacationing in Maui for the month of August celebrating two very special occasions- our 6 yr wedding anniversary and Greyson’s 1st birthday! Every morning I wake up to the sound of the ocean, I am overflowing with gratitude.
It’s not every day we can take off for a whole month and I used to work full-time, and my hubby worked 60 + hour weeks running his technology company. So the fact that we dreamt up this idea of living the island life for a whole month and made it happen is a dream come true and one that we are lucky enough to cross off our family’s bucket list. One day, we would love to move here for sure!
So, I’m sitting in our lanai looking at the incredible view, totally inspired to talk about this healthy, detoxifying, good for your skin salad with you today.
I’m excited to share this gorgeous skin detox salad because I’m a big proponent of eating for glowing skin. After all, you are what you eat, and it is my passion to share beautifying recipes with you and hope that you always feel beautiful too.

Gorgeous Skin Detox Salad Ingredients
This detox salad is all about preserving and enhancing the beauty of your skin.
Red Cabbage
Red cabbage contains very high levels of vitamin A. This is highly beneficial for skin health, keeping skin young, protecting the skin from sun damage, and helping to maintain the elasticity of the skin.
Carrots
Did you know carrots can protect your skin from sun damage? That’s because carrots contain beta-carotene. Beta-carotene is exceptional for protecting the skin from sun damage and wrinkles.
Fennel
We don’t use fennel enough! I love fennel because it protects against free radicals and prevents cell damage.
Did you know you can even apply fennel seed topically to your skin for a fantastic boost of iron, copper, potassium, and zinc?
Red Beets
Another detox superstar! Red beets can purify the blood, eliminate toxins and help your skin glow. You can also apply fresh beet juice to your face to exfoliate dead cells and make your skin soft and supple.
Cilantro
I mention how I love using cilantro in my Cucumber Spring Rolls Recipe. Cilantro is a powerful antioxidant, anti-fungal, and antiseptic that helps clear up your skin and keep it smooth and glowing.
Almonds
Oh, how much do we love almonds! Another antioxidant-rich ingredient. Almonds also protect against oxidative stress, fight wrinkles and contribute to glowing skin.
Note: these amazing antioxidants noted above are largely concentrated in the skin of the almonds. So eat almonds with the skin for maximum benefits.

Ingredients
Scale
1/4 red cabbage,
1 medium carrot,
1 small fennel,
1 small beet,
handful of radishes
1 small endive,
a handful of cilantro
a handful of chopped raw almonds
Instructions
Combine all ingredients in a large bowl. Mix well.
For dressing: Mix lemon juice, a splash of raw apple cider vinegar, extra virgin olive oil, sea salt, and pepper. Pour over salad mixture. You may add chicken breast or other protein on the side.
Notes
For this recipe, I suggest using a food processor with a shredding blade or using a veggie shredder.
In Bulgaria, my home country, we are making this salad often but instead of almond, we prefer the walnuts. And to make it even richer we put parsley and lemon juice.
