This detox pumpkin soup is the real deal! Get ready to have a creamy bowl of healthy goodness perfect for fall.  It’s fall and I’m beyond excited for the cozy weather, autumn activities and delicious food.  Who else is super-excited about all of the food they will eat this fall?!!!! Let’s bring on the butternut squash soup, sweet potatoes, variety of squash, ripe apples, and all things pumpkin.  Speaking of pumpkin, you’ve got to try my Detox Pumpkin Soup.

While we tend to go a little crazy for all things pumpkin this time of the year, I promise this one is soooo worth it.  Why?

How amazing does that sound?  This soup has been on repeat for me and I’m not upset at all.  Fall is the start of soup season and this soup does not disappoint friends! We start with roasting pumpkin in the oven. And you don’t have to worry about carving a whole pumpkin.  I bought some pre-chopped raw pumpkin from Trader Joe’s and I’ve also seen them at other markets. Next, we roast apples and onions for an extra layer of flavor, flavor!

Once that’s done we season with turmeric, cayenne, thyme, and nutmeg.  What a detoxification power combo right!  And the nutmeg adds such a cozy fall vibe for sure!

Finally, we blend this delicious pumpkin soup with organic broth and garnish it with fresh parsley, pomegranate seeds, and raw pumpkin seeds.  This garnish trio does wonders for your skin!

Description

Get ready to have a creamy bowl of healthy goodness.  This detox pumpkin soup is the real deal! It is Vegan, Gluten-free, Dairy-free.


Ingredients

Scale

1 lb pumpkin, fresh chopped

2 Granny Smith apples, cored and chopped

2 medium yellow onion, diced

2 tbsp olive oil or ghee 

2 cups organic vegetable stock

sea salt & black pepper to taste

1/4 tsp turmeric powder to taste

1/4 tsp cayenne pepper

1/2 tsp thyme 

1/2 nutmeg  

Garnish:

raw pumpkin seeds

fresh pomegranate seeds

fresh parsley

 


Instructions

  1. Preheat oven to 350 degrees.  Line baking sheet with parchment paper.
  2. Drizzle pumpkin with olive oil and salt. 
  3. Roast for 20 minutes and check for tenderness. 
  4. Add the chopped apples, drizzle with olive oil, thyme, and salt. 
  5. Add the onions. Drizzle with salt and olive oil. 
  6. Roast the entire mixture for another 10 minutes or until apples and onion is also tender. 
  7. Take veggies from oven and let it rest for a few minutes. 
  8. Transfer mix to a high-speed blender, add the garlic, spices and vegetable stock. 
  9. Blend on high for 3 minutes or until silky smooth. 
  10. Add more stock if too thick.  Transfer to a pot and heat up the soup for a few minutes to absorb all flavors.
  11. Ladle soup into bowls and garnish with pomegranate, pumpkin seeds, fresh black pepper, parsley.

  1. Though I rarely find myself craving blended soups, this one sounds too good to pass up! I have a couple folks with food sensitivities coming to Thanksgiving this year so this will be the perfect starter course. So excited to try it out!
