- 1 lb organic chicken wings
- 1 tbsp coconut oil
- 1 clove garlic (minced)
- 1/2 cup light coconut milk
- 2 zest of limes
- 1 juice of lime
Instructions
- Start by preheating your oven to 400 degrees F. Next, in a large bowl combine wings, coconut oil, garlic, salt and pepper. Line a baking sheet with parchment paper and place wings on sheet. Bake the wings for 30 minutes.
Meanwhile, in a small pot combine coconut milk, honey, lime zest, lime juice and Sriracha over medium heat until it begins to simmer. Slowly add tapioca flour while whisking mixture to avoid clumps. Mine totally became clumpy even though I added the tapioca slowly. But that didn’t show up once the wings were done.
Once tapioca is added, reduce heat to low and continue whisking until mixture has thickened. It should look like a glaze now. Next, remove wings from oven and coat with glaze.
Increase oven temperature to broil and place wings back into the oven on the top rack for 5 minutes or until level of crispiness has been reached.
For me, I left them in for another 5 mins because, I like my Sriracha hot wings extra crispy.
