Oats With Antioxidant Rich Jam

 

Breakfast time, always a challenge!  What to eat…hmmm.  Often times, its oatmeal for many people because of convenience and simplicity.  I admit, it happens to me as well.  So, I’m constantly looking for ways to upgrade those boring ole oats with super foods.

This particular recipe, oats with antioxidant rich jam  is adapted from Lauryn, aka  The Skinny Confidential.  It is loaded with antioxidants and is on rotation at my house for that very reason.

Instant Oats Vs. Steel Cut Oats

The difference between instant oats and steel cuts oats is HUGE.  Firstly, all oat cereals start off as groats which come from hulled, toasted oat grains.  Instant oatmeal is the most heavily processed. The groats are chopped, flattened, pre-cooked and dehydrated.  Salt and sugar are also added.  Think Quaker Oats– and leave it on the shelf.  Steel-cut oats on the other hand, are just toasted oat groats-finely chopped. Steel-cut oats are digested slowly and rank low on the glycemic index- a measurement that predicts how a person’s blood sugar will spike after eating.

Now, lets talk about the antioxidant power of this recipe.  The antioxidant and anti-inflammatory phytonutrients in raspberries are truly remarkable.  There are only a few common fruits that provide the same variety of antioxidants that raspberries do!  These little guys hunt free radical molecules, help control unwanted inflammation and oxidative stress.

Blueberries are known as brain food.  They are known to be extremely beneficial for improvement of memory and slowing down or postponing the onset of cognitive problems.  Amazing right?

  • Steel cut oats, organic
  • 1/2 cup organic raspberries
  • 1/2 cup organic blueberries
  • 1 tbsp chia seeds
  • 1 tsp raw honey
  • Sprinkle of cinnamon

Throw the berries into a bowl.  Add the chia seeds, raw honey and cinnamon.  Next, with a fork begin to mash the berries until desired texture.  Meanwhile, cook your steel cut oats in a pan on the stove.  Cooking time about 8 mins.  Once oats are done, transfer into a cereal bowel and add the jam on top.
